So last nights meal didn't turn out too well. I overcooked the salmon, and probably screwed up on the marinade too because the aftertaste was really weird. On the spots where I kind of over-cooked the salmon...the marinate kind of glazed and tasted funny. The marinade was lite soy sauce, minced ginger, minced garlic, brown sugar, and I added a tsp of seseme oil which was a mistake (I was going out on a limb...and failed). I don't know what part of that marinade fucked up but it was not so good...
The rice was GREAT! Although...considering I had just bought I rice cooker- it certainly should have been! However- note to future rice cookers: 3 cups of uncooked rice is TOO much for one person. For some reason, I was thinking three cups was correct...turns out thats enough for a family of FIVE.
The worst debacle was the ceasar dressing. I am sure AJs recipe is fine...I think it is my less-than-capable hands that screwed this one. I'll have to ask AJ about this one day... if I ever get on MSN when he is.
Seeing as I have two and a half cups of rice left over- I am trying fried rice tonight. I just got home (yea its a bit late for dinner, I understand) and I am determined to cook something well!
On a side note- we are T-3 days from seeing very hot, very nude, very talented, and very sweaty men on new years eve! This will be my one night a year to break my already malfunctioning moral compass and enjoy some primal entertainment (and certainly some adult beverages!). More on this later.
Much Love,
Steve

Two very valuable lessons: 1.) that amount of salmon cooks in less time than you gave it (reduce a bit each time until it's right), and 2.) cook way less rice if you're cooking for one. Now that you've learned those, next time will be better. BTW, some people like overcooked fish. That may be why it turned out the way it did.
As for the marinade, you might try dropping various ingredients. It could have been the sesame oil. If leaving that out doesn't work, I'd try cutting out the garlic. JMO, but I don't think garlic is ideal with salmon. Another possibility is that the recipe wanted regular soy sauce, and there s something different in the lite which causes it not to work. You might also check to see if the recipe expected you to use dried garlic powder and ginger. Fresh garlic and ginger would be more powerful, I think. Finally, brown sugar with a liquid can be expected to form a glaze on the grill or under the broiler or in a hot oven, so the glaze is probably intended.
Another possibility, since the funny taste was where the salmon was overcooked is that the marinade, or some ingredients got slightly burnt. Caramelized (browned) things like onion, garlic, and peppers taste good; but when it goes beyond caramelized to burnt, they get bitter.
Since I don't make cæsar dressing and I don't know AJ's recipe, I have no suggestions there.
Don't be discouraged. Next time will probably be better. I'm sure you'll also want to try some other things. Keep us informed how you're doing.
i've never been able to cook fish (of any type, by any means) and make it work. well, maybe except for fish sticks, but those don't count. and i made the same mistake the forst time i cooked rice. yowee. it makes a bunch from not much. it's pretty tragic, but i eat out a lot becasue i'm such a horrible cook.
Blinking flip - naturgesetz beat me to it! I never use 'lite' anything - just reduce portion size, or use less ingredient, or only have it once a year - but all that 'lite' (aspartame, hydrogenated synthetic vegetable fat simulation subsitute - yech!)
I think your glaze caramelized, and burnt slightly.
Rice - that's too funny! Sounds like the first time I made popcorn But I always find 'yesterday's rice' to be brilliant to cook with.
Cooking big fish - got a dishwasher? Read my blog soon.
Happy New Year =]
Dishwasher. Yes! Friends of my parents discovered that for themselves. Tell him, DBC!
Dishwasher? I am intrigued...
I may try fried rice again tonight; I cooked the rice differently.
